In a bowl, dissolve the yeast in warm water and let it sit until frothy.
Activate yeast

In a large bowl, combine whole wheat flour, ground pecans or walnuts, sunflower seeds, millet, rolled whole wheat flakes, cornmeal, and oats.

1 cup ground unsalted pecans or walnuts
½ cup ground unsalted sunflower seeds
½ cup millet
½ cup rolled whole wheat flakes (hot cereal, can use cracked wheat or wheat bran)
½ cup cornmeal
½ cup oats

Add the activated yeast mixture to the dry ingredients and mix until well combined.

Knead the dough on a floured surface until smooth and elastic.
1 cup unbleached flour (additional for kneading)

Place the dough in a greased bowl, cover, and let it rise until doubled in size.
Let rise

Preheat the oven and bake the bread until golden brown.
