Heat a large nonstick skillet over medium-high heat. Add the ground beef, diced bell peppers, and diced onion. Cook for 5 to 7 minutes, breaking the meat apart as it browns, until no pink remains and the vegetables are tender. Drain any excess fat.
Brown beef and veggies

1 cup bell peppers (diced, any color)
¾ cup yellow onion (diced)

Sprinkle the taco seasoning over the meat mixture and pour in the water. Stir to combine and bring to a boil, then let it cook until the liquid is absorbed and the seasoning coats everything evenly.
Simmer seasoning

Stir in the drained diced tomatoes with green chiles and cook until any remaining liquid evaporates. Scatter the cheddar cheese over the top, cover with a lid, and let it sit for 1 to 2 minutes until the cheese is melted and gooey.
Melt cheese
14 oz diced tomatoes with green chiles (canned, drained)
1 cup cheddar cheese (shredded)
