Combine the fresh cranberries, orange juice, maple syrup, vanilla extract, cinnamon, and sea salt in a saucepan. Bring to a boil over medium heat, then reduce and simmer for 10 to 15 minutes, stirring occasionally, until the berries burst and the mixture turns thick and jammy. Set aside to cool slightly.
Simmer cranberry sauce
2 cup fresh cranberries
½ cup orange juice
¼ cup maple syrup
1 tsp vanilla extract
¼ tsp ground cinnamon

Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper. Lay the thawed puff pastry flat on the parchment. Place the brie wheel in the center and remove a portion of the top rind. Spoon the cranberry sauce over the top and sprinkle with the chopped toasted pecans. Fold the pastry corners up and over the brie, pressing gently to seal.
1 sheet frozen puff pastry (thawed)
10 oz brie cheese (1 wheel, 8-12 oz)
⅝ cup toasted pecans (roughly chopped)

Brush the entire surface of the pastry with the beaten egg and sprinkle with coarse sugar. Bake for 20 to 25 minutes until the pastry is deep golden brown and puffed. Allow to rest for 5 minutes before serving with bread, crackers, or fresh fruit.
