Trim any excess fat from the chicken thighs. Combine with soy sauce, avocado oil, and grated garlic. Sprinkle generously with taco seasoning and mix to coat all sides.
1 lb boneless skinless chicken thighs
½ tbsp soy sauce
½ tbsp avocado oil
1 clove garlic (grated)

Place chicken in an air fryer basket in a single layer. Cook at 400 degrees Fahrenheit until golden brown and crusty on the outside and juicy inside. Alternatively, pan-sear in a hot skillet with oil for 5-6 minutes per side.

While the chicken cooks, blend avocado, mayo, cotija cheese, cilantro, garlic, and lime juice in a food processor or blender until smooth. Add water as needed to reach a drizzling consistency.

2 tbsp lime juice
2 tbsp water (as needed)

Let the chicken rest briefly, then chop into bite-sized pieces. Squeeze lime juice over the chopped chicken. Load warm tortillas with the chicken, drizzle with green sauce, and top with cilantro and diced onion.
