Instructions

Heat oil in a heavy skillet over medium heat. Add minced shallot, garlic, and diced jalapeno. Saute for about 2 minutes until fragrant. Increase heat to high and add the thinly sliced pork and fish sauce. Stir-fry until the pork loses its pink color. Add sugar and water, stir once, then let the pork sit undisturbed for about a minute to develop a golden caramelized crust. Stir and repeat until well browned.

Cook and caramelize pork

18 oz boneless pork loin (thinly sliced)

2 tsp fish sauce

2 tbsp sugar

2 tbsp water

Toss together chopped pineapple, cucumber, cilantro, and red onion. Squeeze lime juice over the top and add a pinch of salt.

Stir together mayo and sriracha until smooth.
