In a mixing bowl, combine the dairy-free milk, chia seeds, maple syrup, and vanilla extract. Whisk thoroughly until everything is well blended and no chia seeds are clumping together.

½ cup chia seeds
1 tbsp maple syrup
1 tsp vanilla extract

Cover the bowl and place it in the refrigerator for at least 6 hours or overnight. The mixture should become thick and creamy. If it seems too thin, stir in an additional tablespoon of chia seeds and refrigerate for another hour.
Chill until set

Spoon the pudding into bowls or jars. Serve plain or layered with fresh fruit, compote, or other desired toppings. Keeps refrigerated in a covered container for up to 5 days.
