Ingredients: ½ cup oil-packed sun-dried tomatoes; 1 lb boneless chicken breasts or thighs; 4 tsp Italian seasoning; 1 pinch salt and pepper; 2 tbsp salted butter; 2 cloves garlic; ⅞ lb short cut pasta; 2 cup water; 2 cup whole milk; 2 oz cream cheese; ½ cup grated Parmesan cheese; 2 cup baby spinach; ½ cup fresh basil

Instructions

Heat the oil from the sun-dried tomato jar in a large pot over medium-high heat. Season cubed chicken with half the Italian seasoning, salt, and pepper. Cook until golden on all sides, about 5 minutes. Remove and set aside.

Sear chicken

½ cup oil-packed sun-dried tomatoes (oil drained and reserved, tomatoes set aside)

1 lb boneless chicken breasts or thighs (cubed)

4 tsp Italian seasoning (divided)

1 pinch salt and pepper (to taste)

Add butter and chopped garlic to the same pot with the remaining Italian seasoning. Cook until fragrant, about 2 minutes. Add the pasta and 2 cups of water. Stir frequently until the pasta is al dente and most of the water is absorbed, roughly 8 minutes.

Cook pasta

2 tbsp salted butter

2 cloves garlic (chopped)

⅞ lb short cut pasta

2 cup water

Stir in the milk, cream cheese, and grated Parmesan until the cream cheese is fully melted and the sauce is smooth and creamy.

2 cup whole milk

2 oz cream cheese

½ cup grated Parmesan cheese

Return the seared chicken to the pot along with chopped spinach and the reserved sun-dried tomatoes. Gently fold everything together. Remove from heat and stir in fresh chopped basil. Serve with extra Parmesan on top.
